The Legacy of Josephine’s New Orleans

Our story begins with Angelina Josephine Diliberto Fallo, a second-generation New Orleanian who grew up with the birth of jazz, parades, and, of course, the irresistible flavours of New Orleans food. Her friendship with a young Louis Armstrong highlights the cultural vibrancy of the city and its cuisine: “Louie was only famous in New Orleans when I asked him to play my wedding in 1920, and Louie always loved my sauce and New Orleans dishes.”

Angelina Josephine’s passion for Creole cooking has been passed down to every product we make today. Learn more about our history here.

What Makes New Orleans Food Unique

New Orleans food is a harmonious blend of French, Italian, Spanish, African, and Native American influences. The arrival of European settlers in the mid-1800s brought herbs, spices, and cooking techniques that, combined with local ingredients, gave birth to Creole sauces, jambalaya, and gumbo.

The city’s cuisine is defined by bold, layered flavours, slow-cooked sauces, and a celebration of every ingredient. Dishes are meant to bring people together, whether at church fairs, weddings, or family gatherings.

Creole vs Cajun: Understanding the Difference

When it comes to New Orleans food, understanding the difference between Creole and Cajun cooking is essential:

  • Creole cuisine, born in the city, features the ‘holy trinity’ of onions, peppers, and celery, often combined with tomatoes. The result is a rich, red-hued dish, such as Creole jambalaya, celebrated for its depth and complexity.

  • Cajun cuisine, originating in rural Louisiana, focuses on slow-browned meats and vegetables cooked with stock, creating smoky, brown-hued dishes. Both styles showcase the versatility and heritage of New Orleans food.

These distinctions are part of what makes Josephine’s New Orleans products so authentic and adaptable.

The Origins and Meaning of Jambalaya

Jambalaya is one of the most iconic New Orleans food dishes, with roots in Spanish paella. When saffron was unavailable, local cooks substituted tomatoes, creating a bold, flavorful Creole classic.

The word “jambalaya” has many theories of origin:

  • Some believe it comes from the French Jambon (ham) and the African Aya (rice).

  • Others trace it to the French phrase “Jean, balayez!” meaning “sweep something together.”

  • Native American influence is also noted, with the Atakapa phrase “Sham, pal ha! Ya!” meaning “Be full, not skinny! Eat up!”

Regardless of origin, jambalaya remains a unifying dish — versatile, filling, and deeply rooted in New Orleans culture.
